Made with Ecco Bella's Boon Broth, a plant-based alternative to bone broth, this creamy tomato soup is the healthiest and most delicious way to get your grilled (vegan) cheese sandwich dip on!

Ingredients
- 6 cups water
- 1 package Boon Broth
- 3 cans diced tomatoes
- 1 can coconut milk
- 1 small can tomato paste
- 1 tablespoon salt or to taste
- 1 teaspoon black pepper optional, to taste
- 1 small onion diced
- 4 cloves garlic minced
- Fresh oregano and basil chopped (optional, as garnish)
- Extra virgin olive oil optional, as garnish
Instructions
- Sauté onions and garlic in either 1 tsp olive oil or water (if making oil-free) until brown and caramelized.
- Add tomatoes, tomato paste, and water then blend completely with an immersion blender.
- Add Boon Broth and coconut milk then continue blending until smooth and creamy.
- Season to taste and allow to simmer 15-20 minutes before serving. Garnish with fresh herbs and a drizzle of extra virgin olive oil.
